Seabourn reveals new Mediterranean restaurant – what is it?

Seabourn has revealed a new Mediterranean restaurant to be rolled out across four ships next year. This is what you need to know.

Seabourn, renowned for its luxury cruises and expedition travel, is introducing a new dining experience called Solis.

This fine dining venue celebrates Mediterranean cuisine inspired by the destinations Seabourn’s luxury ships visit.

What is the new Seabourn restaurant?

Solis, an exquisite addition to Seabourn’s culinary offerings, will feature fresh, modern Mediterranean dishes and will debut on Seabourn Quest in January 2024, extending to Seabourn Encore, Seabourn Ovation and Seabourn Sojourn by Spring 2024.

This new Seabourn dining experience has been carefully crafted to bring the luxury cruise line’s signature elegance and sophistication to its fleet of ships, ensuring that each meal becomes a truly memorable occasion.

Solis is designed to engage all the senses, offering delightful surprises such as whimsical cocktails, vibrant presentations, and elevated flavour combinations within a redesigned dining space that evokes the Mediterranean’s warm ambience.

What food is in the new Seabourn dining venue?

Seabourn restaurant Solis will introduce a diverse array of dishes inspired by Mediterranean flavours from the Rivieras to the Greek regions. Each dish is a masterpiece of taste, presentation, artistry and storytelling.

Food in the Seabourn restaurant will comprise a delightful selection of dishes, including Basque piquillo peppers with Murcia goat milk cheese, whole sea bass baked in a sea salt and thyme crust, Tuscan-style grilled beef porterhouse steak, and spiced lamb shank with smoked eggplant, tahini, pomegranate, pine nuts, and labneh. A variety of vegetarian and vegan options will also be available.

In addition to the exceptional cuisine, Solis will present a sophisticated experience with a vintage cocktail menu that includes classic cocktails like the Kir Royale, Negroni, and Aperol Spritz, expertly crafted to perfection.

Which chefs are in the new Seabourn restaurant?

Seabourn dining venue Solis was developed in collaboration with Seabourn’s long-time partners, Master Chef and Culinary Partner Chef Anton Egger [below, right], and Senior Corporate Chef Franck Salein [below, left], both with extensive Michelin-level experience. Their passion for travel and deep understanding of Seabourn guests have contributed to the brand’s culinary success, rivalling the finest restaurants.

Chef Egger has opened restaurants in Singapore and Bangkok and Chef Salein has held executive chef positions at several two and three Michelin-star restaurants. The skilled Seabourn culinary team excels at creating dishes catering to diverse tastes, ensuring meticulous preparation and beautiful presentation.

With the introduction of Solis, Seabourn will conclude its eight-year culinary partnership with Chef Thomas Keller by Spring 2024.
